Banana Nut Cake

INGREDIENTS:

1/2 c butter at room temperature
3/4 c raw sugar
2 eggs

1 tsp baking soda
2 lg ripe bananas mashed
1 tsp pure vanilla extract
1 1/2 c unsifted whole wheat flour
1 c coarsely chopped walnuts


Set the oven to 350 degrees and butter a 9-inch tube pan.

Put the butter into a large bowl and blend in sugar. Beat in the egg; add all ingredients except nuts. When well-blended, add nuts.

Bake about 50 minutes or a trifle longer. Just until the cake begins to shrink away from the sides of the pan. It should not be allowed to dry out in baking, but rather should have a moist, almost custardy texture.
Serve as is or with a blob of whipped cream and a few banana slices.

Tomato kulambu

Heat oil and fry ½ tea spoon of fennel seeds powder

Add 1cup of chopped onion and let it fry for 2 minutes. Then add 2 chopped tomato,
½ tea spoon red chili powder and ½ tea spoon of salt.

Cook for 10 minutes until the tomato is completely cooked. Garnish with coriander leaves.

Eat with rice …Make it hot by adding little more chili powder

Rava Vadai

1 cup – Rava
½ cup milk

1/2 water
1/2cup sugar
½ cup grated coconut
6 cardamoms
Pinch of salt
Pinch of baking soda

Soak all ingredients together for 1hour.

After 1 hour make the batter in such consentience that you can use spoon to drop the batter in oil.

Let if fry until it gets golden color

Very tasty and really good when you eat next day

Appam


Appam

1cup raw rice
1 cup boiled rice
1 spoon Vendayam
One hand full of ural dal paste

Soak the rice mixture and vendayam for 3-6hours and grind them together
Add the Ural dal batter in to rice mixture .Add salt and let it sit for over night at room temperature.


Next day heat the pan and make pancake size layer. Cover the pan and let it coke for 2 minutes. Take it out and eat with sweetened coconut milk

Cassava Cake Recipe! from Diem Le


* 3 pkgs of frozen, grated cassava ( in frozen section of asian market, from the Phillipines)
* 6 eggs
* 1 can of condensed milk
* 1 can of coconut milk
* 1 stick of melted butter
* 5 Tsp of corn flour
* Sugar to taste

Mix above ingredients together ( I beat the eggs first. Add condensed milk, coconut milk, sugar, and mix again. Add butter, cassava and corn flower. Mix to final consistency).
Bake @ 400* for 1 hour or until the tooth pick comes out clean.

Vathal Kulambu

Fry mustard and Ural Dal with 2 red chili in 3 tea spoons of oil
Add 1/2 cup of your favorite dried vegetable and let it pop up in the oil for 2 minutes

Add 1 cup of chopped Onion and 1/2 a cup diced garlic
keep stirring until onion and garlic get golden brown color

Add 4cups of water ,1table spoon of chili powder,1/2 table spoon of coriander powder and salt
Let it boil for 20-30 minutes until water reduced to half

Now add 1 tea spoon of tamarind and check the salt .let it boil for another 15minutes.

Now the water will be reduced and you will see oil coming on top . Garnish with curry leaves
It is ready to eat with rice and ghee
